Hi Everybody,
So today i’m going to be doing something a little different -a veggie dish. I just keep reading about the impact of eating meat. I know some people don’t want to give up meat but the impact that undertaking a “Meatless Monday” has on you yourself and on the environment is unbelievable.

Anyway, for my first dish, i’m recreating a chickpea curry inspired by The Happy Pearย on their YouTube video – here
You Will Need
1 tsp oil
1 clove of garlic
veg of choice – (onion, peppers, spinach kale etc. whatever takes your fancy!)
1 tin of coconut milk
1 tin of chopped tomatoes
1 tin of chickpea’s
Side order of your choice I choose brown rice
Chili
Spices
2 tbsp curry power
1 tsp paprika
1 tsp cumin
salt & pepper to taste
(The Happy Pear add in Lemon & Lime but I left it out)
What Next?
First boil your side order eg rice and let it cook while you prepare your curry
Heat the oil in your pan, remember to choose a deep pan as a lot of liquid will be added.
Add the garlic and the chopped onion and peppers etc.
Next add your chili
Add the spices and let them cook away for 25-30 seconds
Then add in your drained chickpeas, tomatoes and coconut milk
Add in your spinach ย or kale and let it cook and wilt for a few minutes
Once it is cooked and hot enough to serve plate up and serve with your side
